This pie is delicious and very quick and easy. It is a light pie and not overly sweet.
I used a premade oreo pie shell and it was delicious and so much easier.
25 chocolate wafers (such as Nabisco Famous Chocolate Wafers)
3 oz bittersweet chocolate, finely chopped
2 teaspoons canola oil
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tesp vanilla
1 small tub of frozen whipped topping
2 Tbls seedless strawberry fruit spread (I used Smuckers Simply Fruit jelly and it worked great)
1 Tbls Chambord (raspberry flavored liqueur or Triple Sec will work fine.) I didn't use any and it was just fine
1/2 tesp fresh lemon juice
1 lb small strawberries, hulled and cut
Place chocolate wafers in a food processor; process until finely ground. Place bitterweet chocolate in a small microwave-safe bowl. Microwave at HIGH 45 seconds. Add melted chocolate and oil to processor; process until well combined. Gently press mixture into bottom and up the sides of a 9-inch pie plat or a removable-bottom tart pan coated with cooking spray. Freeze crust 15 minutes or until set.
Place cream cheese, sugar, and vanilla in a medium bowl; beat with a mixer at medium speed until smooth. Fold in whipped topping. Carefully spread over bottom of crust.
Place fruit spread in a large microwave-safe bowl; microwave on HIAGH 10 seconds or until softened. Add Chambord and juice; stir until smooth. Add berries; toss to combine. Arrange berry mixture over pie. Chill for 30 minutes before serving.
